What a great food week!

I spent the weekend in Charleston learning about cooking from some pretty awesome chefs. It’s so cool to watch and hear them talk about the importance of local foods!

What’s “local?” There is frequently debate about how to define it, but fortunately in South Carolina we have the Certified SC Grown program, which helps consumers identify which products are grown or produced in our state. That’s good because fresh local, seasonally grown foods are picked at peak of ripeness and loaded with vitamins, minerals, antioxidants and fiber.

It won’t be long before my favorite time of the year, with lots of locally grown produce available to help us choose more color for our plates. Try this Stone-Ground Mustard Vinaigrette salad dressing developed by Providence Cooks! Chef Brandon Carn.

Stone-Ground Mustard Vinaigrette

Ingredients:

  • 1 garlic clove
  • 1 small shallot
  • ½ cup cider vinegar
  • 1 cup stone-ground mustard
  • ¼ cup agave sweetener
  • ¼ cup extra-virgin olive oil
  • 2 oz. fresh parsley

Preparation:

  • For best results, combine ingredients in a food processor in the order as listed. That’s it!

Yields: 2 cups

Nutrition Information (per tablespoon): 28.96 Calories, 1.9 grams protein, 0 mg. cholesterol, 87.71 mg. sodium, 2.79 grams carbohydrate, .35 grams protein.
