Something to lift your mood: Artichoke Mushroom Chicken

Y’all are going to love hearing this: Eating more fruits and veggies might boost your mood.

A recent study tracking the food habits of 12,000 people over the course of two years found that happiness grew incrementally with each additional serving of fruits and vegetables, up to a total of eight servings a day.

The mood-boosting nutrients also help level out blood sugar levels and fill us up – so we end up eating less in the way of processed foods.

So once again, fruits and veggies come out on top! More research is needed to confirm the recent findings, but between now and then, maybe we should all try to eat more from these groups.

Artichoke Mushroom Chicken

Ingredients:

  • 3/4 cup white wine
  • 1/4 cup lemon juice
  • 1 tbsp. dried Italian herbs
  • 4 chicken breasts, skinless
  • 14-oz. can artichoke hearts, drained and quartered
  • 1 cup fresh mushrooms
  • 2 cups hot cooked rice (without salt or fat)

Preparation:

  • Combine wine, lemon juice, and seasonings in a large skillet, stirring well.
  • Add chicken. Cover and bring to a boil.
  • Reduce heat and simmer 45 minutes, or until chicken is done.
  • Add artichoke hearts and mushrooms.
  • Continue to simmer, stirring frequently, until thoroughly heated.
  • Serve over rice.

Nutrition information: 350 Calories, 5 grams fat, 96 mg. cholesterol, 178 mg. sodium.
